What I like most about carnitas are that they are minimal work, but so juicy and full of flavor. It is most definitely a “set it and forget it” type of meal. I like to use a pork butt or a pork shoulder to ensure I have a tender piece of meat. Another thing I like about carnitas are that they are so versatile. You can make tacos, burrito bowls, a salad, eat it by itself, etc. And it tastes good on anything 🙂 And with Trader Joe’s Salsa Verde sauce…oh boy, it is tasty! Below is a foolproof way to make carnitas in the crockpot!

Prep Time: 10 minutes Cook Time: 8 hours on low, 4 hours on high Yield: 6 servings
Ingredients:
- 2.5-4 lb pork butt or pork shoulder
- 1/2 of white onion
- 1/2 cup of Trader Joe’s Salsa Verde
- Salt/Pepper
- 1 TBSP of cumin
- Endless cilantro 🙂
- 1/2 cup of water
Directions:
- Place pork into crockpot
- Pour in 1/2 cup of water
- Let cook on low for 6 1/2 hours or high for 3 hours
- Towards the end of the cook time, cut half of onion into 4 chunks
- Take out pork and shred it
- Remove water from crockpot
- Place pork into crockpot
- Place onion, cumin, salt and pepper, and salsa verde sauce into crockpot
- Stir around until mixed
- Place lid back on and cook on low for another 1.5 hours or on high for 1 hour.
- Optional: Preheat your oven to broil high
- Optional: Place your carnitas on a lined baking sheet and broil for 5 minutes, take out, move around, broil for another 5 minutes until a little crispy
- Remove carnitas from oven, serve however you would like, add as much cilantro that makes your heart happy, and enjoy!

Note: You can add all ingredients into crockpot right away and cook for entire time if you are not able to complete steps 5-10.
