I love soup and I love chili. It is easily something I can eat every single day, no matter the time of year. This White Chicken Chili is a spin on a hearty soup and a lighter chili (if you can picture that LOL). It is creamy and powerfully flavorful – and hearty as heck! It is a chicken broth-based chili with cashew cream to make it creamy and hearty chicken with fire roasted tomatoes for an ultimate combo. There are also many spices that you definitely have in your pantry that add an element of fun in there! Did I mention it is another one-pot recipe? 😉

WHITE CHICKEN CHILI (WHOLE 30, PALEO, AND KETO)
Equipment
- large dutch pot
Ingredients
- 1-1.5 lbs chicken
- 32 oz chicken broth whole 30 compliant
- 3/4 large yellow onion chopped
- 3 cloves garlic chopped
- 2 tsp garlic powder
- 1 tsp cumin
- 2 tsp paprika
- 1 tsp oregano
- 1/2 tsp cayenne pepper
- 1 tbsp cilantro
- 10 oz fire roasted tomatoes I like the canned Rotel brand
- 1 lemon (juice)
- 1 cup cashew cream
- lots of salt and pepper to taste
- 3 avocados optional
- 1 cup solid part of coconut milk optional (see notes)
- 1/4 tsp salt optional (see notes)
- 1/2 lemon (juiced) optional (see notes)
Instructions
- Cook chicken in dutch pot on medium heat until barely pink or no pink (do not overcook or it will get dry)
- Place chicken off to the side and shred when you have a moment
- Place chopped onion and garlic into the pot and cook until fragrant
- Add broth into dutch pot with the garlic and onion
- Add in all seasonings, cilantro, fire roasted tomatoes, and lime juice and stir together
- Add in the chicken and cashew cream and stir together
- Add salt and pepper to taste
- Let simmer for 15-20 minutes if for maximum flavor
- Optional: Serve each serving with half of a sliced avocado
- Optional: in a separate bowl mix coconut milk, 1/4 tsp of salt, and the juice of 1/2 a lemon together for "sour cream"
- Serve and enjoy!
